Quick and Easy Catfish Recipes

Warm weather and catfish season are upon us. Here are three quick and easy recipes for catfish fillets that are low on prep time and high on taste.

Oven Baked Catfish

2 lbs catfish fillets
1 cup bread crumbs
1 cup milk
1/3 cup butter, melted
½ teaspoon garlic powder
½ teaspoon oregano
dash salt and pepper

Preheat oven to 500 degrees. Add garlic, oregano, salt and pepper to bread crumbs. Dip fillets in milk and roll in crumb mixture. Place on greased baking sheet and drizzle with butter. Bake for 12 minutes. Serves 4 to 5.

Catfish Almond-Dijon

4 catfish fillets
¼ cup Dijon-style mustard
1 tablespoon melted butter
½ cup bread crumbs
½ cup ground almonds
dash salt and pepper

Brush each fillet with mustard. Combine butter, bread crumbs, salt and pepper, and almonds. Roll mustard-covered fillets in crumb mixture. Place on greased baking sheet and cook for 14 minutes. Surface should be golden-brown when done. Serves 4.

Easy Catfish Chowder

1 lb catfish fillets, cut into 1 inch pieces
4 slices bacon
1 lb chopped tomatoes
1 lb potatoes, cooked and diced
1 small onion, chopped
½ teaspoon thyme
½ teaspoon pepper
1 tablespoon lemon juice
1/3 cup tomato juice
dash salt

Fry bacon until crisp. Remove from pan and set aside. In bacon grease cook onion until translucent. Add remaining ingredients. Cover and simmer 10 minutes, keep on medium heat and stir frequently. Add crumbled bacon and serve. Serves 4.
